Ingredients 材料:
1-1.5 kg chicken frames(2 frames ) 2 个鸡骨架
4 chicken wings 4 鸡翅膀
4-6 chicken feet 4-6 鸡脚 (optional, for gelatinous effect)
2 big tablespoon apple cider vinegar 2 大汤匙苹果醋
1 large brown onion 1粒大棕色洋葱
1 bulb garlic with skin on(cut into half horizontally) 1 粒大蒜
1 big leek (sliced, only the white part) 1棵韭葱
2 carrots (roughly chopped, with skin on) 2 萝卜
2-3 celery stalks, roughly chopped 2-3 芹菜梗
2 sprigs rosemary 2 小枝迷迭香
2 sprigs thyme or your choice of less strong taste herbs 2 小枝百里香
3 -4 litres filtered water 3-4 公斤过滤水
2 large handful of parsley stalks(to be placed into the pot 1 to 2 hours before the broth is ready!) 2 把香菜
All ingredients are preferably organic or try your best to source for free range animals or chemical free/pesticide free vegetables.
Note: Adding in apple cider vinegar is to help draw out the mineral nutrients from the bones!
Directions:
Place all ingredients into 6 litre slow cook pot. Adding 3-4 litres of filtered water just to cover all ingredients nicely, turn the slow cooker to LOW heat for 8-12hours.
2. Place 2 large handfuls of parsley stalks into the pot at the 11th hour of cooking, if the cooking is set for 12 hours only.
Cool the broth, strain it through a fine sieve into different glass jars for storage into fridge or freezer. I find that a stainless steel funnel with a sieve is very helpful in this process when pouring the broth into different glass jars.
Place the broth jars into the fridge overnight, so that the fat rises to the top and congeals. Reserve the fat for cooking. The broth below the fat should be thick and gelatinous!
Broth jars can be kept in the fridge for up to a week or in the freezer for up to 3 months. Variation: you may like to add in goji berry, mushroom, zucchini for a more flavourful broth which I love...
Note:
This is chicken tonic soup, it is the gelatin of the soup that nourishes your body so don't fill too much water in your pot, water level should just nicely cover all ingredients will do.
If you don't have a slow cooker at home, you can use stove top method to cook this broth, using low heat simmer it slowly over 8 hours or slightly longer.
